From fronting The Pussycat Dolls as their lead singer (who could forget the track Don't Cha!) to launching her solo singing career (yep, we've still got that song Baby Love with will.i.am stuck in our heads), to being a judge on The X Factor UK last year, the 41-year-old Hawaii-born beauty is a celeb that we - along with the rest of the world - can't get enough of.
Now, we're absolutely fixated with watching episode after episode of Australia's Got Talent as Nicole has landed herself a role as a judge for the show, hunting for the next biggest entertainer in the nation. With such an infectious personality that permeates warmth, you can totally see why Nicole was picked as a judge. "I just think this show is unlike anything I’ve ever seen before and I guess I’m the perfect candidate because I’m very expressive and have a wide range of emotions – which you’re able to see on the show – which is reflective of how amazing the talent is," she told New Idea.
We recently caught up exclusively with the star and found out she’s just as big of a beauty buff as we are!
On the highlight of her career so far...
"There are too many amazing memories to just choose one; probably Cats the musical on the West End is one for sure, touring the world with The Pussycat Dolls and being able to buy my parents a home in Hawaii."

"A MAC Lip Pencil, coconut oil and tea tree oil!"

On how she keeps her hair looking so glossy...
"Shu Uemura just sent me a box of goodies and my hair team use it when I’m here in Australia and I love them!"
On her first beauty memory...
"I remember I wasn’t allowed to wear makeup when I was younger, so I used a tinted Vaseline and pretended it was lipstick."
On whether she packs a lot of beauty products when travelling...
"I don’t really fly with many products, I HATE having heavy luggage, and when I travel for work my hair and makeup team have a lot of what we need. I carry the bare essentials, for example there is a coconut oil-based deodorant by Kopari that I absolutely love. It’s all natural and you smell like a fruity snack!"
On whether she ever does her own hair and makeup...
"On days when I’m not working, I try and give my skin and hair a break or throw on a hat. If I have to do it myself I go for fresh illuminating skin, creamy contour, a little blush."
On her favourite ways to keep fit...
"I really like to mix it up, whether that’s Barry’s Bootcamp or F45 here in Australia, a jog around the city or just 30 mins in the hotel gym. I think doing different classes and exercise is key to motivating you to want to go. Find what you enjoy and smash it. I try and get an hour in most days of the week."
On how she manages to squeeze in exercise during a busy schedule...
"I think it’s really important for mental health as much as physical. For me, with such a rigorous flying schedule, being trapped in a little metal capsule for almost 60 hours a week can put a real strain on your mental and physical health, so it’s more about making the time. I think that we all have to make a little time - you really notice and reap the benefits of a little exercise each day."
On how important healthy eating is to her...
"Again, it's everything in moderation. Am I aware of what I’m eating? Yes. Do I love chocolate and have days where I stuff my face? Of course, I’m human. I think my favourite foods are a simple but great tomato basil spaghetti or a burrata with prosciutto. I love sushi too. OH AND OYSTERS."
